| Fruit Skewers |
Ingredients:1 small cantaloupe1 small honey dew melon 1 box of strawberries 1 small bunch of grapes(red, green or black) 6 - 6" bamboo skewers Prepare the fruit: 1. Wash cantaloupe and melon, and wipe with a towel. 2. Wash and pick strawberries and allow to drain in a colander, or pat dry gently with a clean towel. Pick stems and arrange on a platter 3. Wash grapes and allow to drain, or pat dry gently with a clean towel. Pick stems and place on a platter. 4. With a sharp knife peel outer skin from cantaloupe and melon. 5. Cut into half and scoop out all the seeds and discard 6. Cut lengthwise into half, and then into wedges about 1 1/2" wide. Now cut wedges across into 1 1/2" cubes. Arrange melons and cantaloupe separately on a platter. Assemble the skewers: Take a grape and pierce through with a bamboo skewer pushing right to the end of the skewer. Then pick up a cube of cantaloupe and attach on to skewer. Repeat process with alternate pieces of cantaloupe, melon and grapes. Top each skewer with a strawberry to make a splash of colour. Wrap each skewer with saran wrap and store carefully in a plastic container in the fridge. Helpful Hints: I do not recommend apples and pears as they get discoloured quickly. Bananas may get mushy. They can be used if you plan to eat them right away. You can also brush them with a little lemon juice and sugar to prevent oxidizing. Asian apples are fine to use as they don't change colour easily. For a tropical treat, use mangoes and pineapple (cut into 1" cubes, and kiwi cut into circles. Mandarins and oranges can be peeled and separated into segments before passing through the skewer. |
Salad Skewers for lunch on a stick!
Store left-over fruit in air tight plastic containers, and use for breakfast, fruit salads or smoothies.
These are a great idea for portable office lunches or school lunch boxes. Just put them in a zip lock bag or wrap them in saran wrap, and voila you got 2 instant servings of veggies on one skewer!
They can be stored in the fridge over-night.

Ingredients:1 head iceberg lettuce.1 yellow bell pepper 1 red bell pepper 1 English cucumber Cherry tomatoes Wash and cut lettuce into small wedges. Cut each wedge into 2" chunks. Cut peppers into wedges, removing stem, seeds and membranes. Wash and pat dry tomatoes. Method: Starting with a wedge of lettuce at the bottom, thread the vegetables in alternate colours, ending in a cherry tomato at the top. Drizzle with your favourite salad dressing and enjoy! Other serving suggestions: To make a more wholesome meal on a stick: Add cubes of your favourite cheese, shelled cooked shrimp, ham or fully cooked sausage rounds. |
