Happy Mother's Day

Dear friends,

May is one of my favourite months. Apart from the gorgeous sunshine and the garden bursting with blooms, May brings us mothers a very special day - Mothers' Day! Here are some of the greetings I received from my friends....

I hope you all enjoyed a wonderful Mothers' day. The deepest need for a human being is to be appreciated for what we do. So I really appreciated all the things that my family did for me. The Highlight of my day was when my 18 year-old daughter Serena treated me to a special mom & daughter day at a Spa. It was far more enjoyable than just receiving a gift certificate where I would have had to go alone. The adventure for me began when we both hopped on the Sky train to go downtown, (rather than driving and looking for parking) we got a little lost and had to hop a cab to get to get to our destination on time. We had a quick lunch, and then enjoyed the experience together at the Spa. When I returned, there was a big bouquet of flowers from my son. My husband and I then rushed off to our Sunday evening Salsa class and ended the day with a delicious Malaysian dinner at a new restaurant we thoroughly enjoyed.

If you like spicy and flavourful food like I do, the name of the restaurant is Kedak House at 1652 S.E. Marine Drive, Vancouver. Don't expect a great ambience in fine dining, but the food was fabulous and affordable, and staff friendly and helpful. Malaysians use similar spices as in Indian cooking, with the addition of herbs and ingredients like lemon grass, pandan leaves, tamarind, dried shrimp and anchovies to add a richer flavour. The dinner buffet had fried rice, Mee Goreng (noodles), lamb curry, eggplant, cabbage curry in coconut sauce, peanut & anchovy sambal, a rich peanut sauce and an assortment of desserts.


Recipe of the Month

Here are some of the traditional Malaysian recipes you can enjoy at home, and there are similar Indonesian recipes in my cook book "Ethnic Pleasures", which you can download from my website: www.jinisethnicgourmet.com

With the great weather we are enjoying now, it is so easy to fire up your barbecue and make a delicious and heathy dinner - and also relax while cooking! Make a salad and some rice to accompany this meal Here's a recipe for the famous peanut sauce served with Indonesian and Malaysian satays or skewers of barbecued marinated meat or prawns which can be easily done on a barbecue.

Peanut Sauce

1 cup sugar
1 large onion
1 T. tamarind paste
1 T. shrimp paste
1/2 cup water
2 stalks lemon grass
1/2" piece ginger
1 T. crushed chillies
1 cup peanuts, roasted
1/2" piece of galangal(optional)
Water - as needed to make a thick sauce


Method:

Grind the roasted peanuts, and set aside.
Dissolve the tamarind paste in 1/2 cup water.
Grind lemon grass, ginger and galangal until fine.
Slice onion and stir fry until slightly browned.
Add in all the ground ingredients.
Add in chillie and tamarind juice and lastly peanuts, sugar and salt. Simmer until the gravy thickens.
To serve, arrange a few sticks of satay on a plate and seve with a bowl of peanut sauce, cucumber and sliced onions.

Marinated cucumber/onion salad

3 medium cucumbers
2 small red onions
4 tbsp. sugar
4 tbsp. wine vinegar
1/2 tsp. salt


Method:

For salad, cut cucumbers in half lengthwise, then cut into crosswise slices about 1/4-inch thick. Cut onions in half lengthwise, then in 1/4-inch thick crosswise slices. Stir together sugar, salt, and vinegar. Add cucumber and onion and mix gently together. Cover and chill before serving.
