Dear friend,

Are those April showers really over or are they still looming in the sky? Oh never mind, I can still enjoy the May flowers!

The cherry blossoms and tulips are ablaze with colour, as I take my daily walk around the neighbourhood here in our beautiful Delta, BC. As Eckhart Tolle says in his book "The New Earth" flowers are the enlightenment of trees!

With Mother's Day just around the corner, a thought just crossed my mind --- are children the enlightenment of Mothers? I will leave that for each of you Moms to ponder....

One thing I do know is every mother has a deep yearning to be appreciated every day - not just on Mother's Day!

I appreciate my mom for all the things she taught me... she had no degree in home economics, but yet ran an efficient household and taught me simple things like cooking, home cures for every common ailment, sewing, cleaning, and all those mundane things that people these days don't think is important enough to teach their kids!

If she was still with us, she would have got such a kick in knowing that I do cooking classes and catering, out of my own choice and passion!

A mother is she who can take the place of all others but whose place no one else can take.

Recipe of the Month:

Fruit Skewers

I have been making these fruit skewers for most of my catering events, and it is usually the first thing that people always grab from the buffet! So even the most reluctant and uninspired fruit eaters will want to try these because they look s..o..o. good!

Any combination of your favourite fruit can be used, and I guarantee they will all be devoured!

You will need:

Fruit Skewers

Ingredients:

1 small cantaloupe
1 small honey dew melon
1 box of strawberries
1 small bunch of grapes(red, green or black)
6 - 6" bamboo skewers

Prepare the fruit:
1. Wash cantaloupe and melon, and wipe with a towel.
2. Wash and pick strawberries and allow to drain in a colander, or pat dry gently with a clean towel. Pick stems and arrange on a platter
3. Wash grapes and allow to drain, or pat dry gently with a clean towel. Pick stems and place on a platter.
4. With a sharp knife peel outer skin from cantaloupe and melon.
5. Cut into half and scoop out all the seeds and discard
6. Cut lengthwise into half, and then into wedges
about 1 1/2" wide. Now cut wedges across into 1 1/2" cubes. Arrange melons and cantaloupe separately on a platter.

Assemble the skewers:
Take a grape and pierce through with a bamboo skewer pushing right to the end of the skewer. Then pick up a cube of cantaloupe and attach on to skewer. Repeat process with alternate pieces of cantaloupe, melon and grapes. Top each skewer with a strawberry to make a splash of colour.
Wrap each skewer with saran wrap and store carefully in a plastic container in the fridge.

Helpful Hints:

I do not recommend apples and pears as they get discoloured quickly. Bananas may get mushy. They can be used if you plan to eat them right away. You can also brush them with a little lemon juice and sugar to prevent oxidizing. Asian apples are fine to use - as they don't change colour easily.

For a tropical treat, use mangoes and pineapple (cut into 1" cubes, and kiwi cut into circles.
Mandarins and oranges can be peeled and separated into segments before passing through the skewer.
