Mediterranean Chick-pea Salad

Ingredients:

1 can chick peas,drained
1/4 red onion, chopped fine
1 bunch parsley, chopped
1 yellow bell pepper, chopped
1 red bell pepper, chopped

Dressing:

1/2 lemon, squeezed
1/4 cup olive oil
1 tsp. oregano
1 tsp. thyme
1/2 tsp. chili flakes or black pepper
Salt to taste

Instructions:

  1. Place all the ingredients in a mixing bowl and toss with dressing.
  2. Refrigerate for at least 1/2 hour for flavours to blend.
